The Ask

A year after we helped Via Triozzi break onto the scene and win the hearts and palates of Dallas, chef Leigh Hutchinson was ready to one-up herself and complete the rooftop terrace.

The previous architect’s plans reflected an earlier, limited vision for the rooftop. However, now that Via Triozzi had fully come into its own, we understood that we could do so much more. Ready to seize this new opportunity, the second-generation Italian chef did what she does best – start from scratch. 

Leigh also called upon the same powerhouse team that turned her Tuscan roots into a beloved brand story at Via Triozzi: Memo, together with restaurant and culinary consultants Leslie Brenner and Bradford Thompson. This trifecta of hospitality veterans is now operating as the Three Bean Group, delivering brand, culinary, and marketing strategy in one streamlined approach for record-breaking brand (re)launches.

 After Via Triozzi’s unequivocal success, a high bar was set for the terrace. Creating a separate brand for the rooftop was an ambitious path – but by doing so we were able to make lightning strike twice.

The Work

While Via Triozzi transports guests from Texas to Tuscany, Terrazza di Triozzi takes guests somewhere fresh. And there’s nowhere more vibrant and invigorating than the Italian seaside. 

This was our bold goal: to provide two of the most mythical Italian experiences in one culinary destination. Tuscany is home – the Cinque Terre is the weekend. Via Triozzi is dinner among the olive groves – the Terrazza is aperitifs on the cliffs, surrounded by sea and sky. 

With our team overseeing the entire renovation, all aspects of development were aligned to this one crystal-clear concept: light, luscious seaside vibes. From creative direction and interior design to culinary point-of-view and launch PR, the brand literally breathes vacations and Vespas, sunbathing and spritzes. 

The brand also differentiates Terrazza di Triozzi from Dallas’s casual rooftop bar scene. Instead of the sprawling decks and city views guests expect, we asked our architect to imagine an intimate, immersive lounge. Rather than looking out, we wanted to draw guests in through spatial planning and design – and by hiding just enough of the city skyline to conjure Capri.

Simple, fresh, and light, the culinary program developed by Bradford and the Via Triozzi culinary team also captures the magic of the Italian coast – while not overly taxing the very busy staff. 

Whether guests begin or end the evening at Via Triozzi or the Terrazza, we created a brand narrative that effortlessly integrates the restaurant downstairs with its elegant, immersive upstairs lounge.

The Results

Guests and press agree: lightning does strike twice for chef-owner Leigh Hutchinson.

With Leslie leading pre- and post-opening marketing and PR, buzz for Terrazza di Triozzi began in late 2024 for its April 2025 launch. Since opening, reception has been stunning. Booked and booming from day one, business has far exceeded Leigh’s expectations.

Cozy yet expansive, intimate yet airy, Terrazza di Triozzi serves an experience unlike any other rooftop in Dallas. It’s an escape to a mythical Italian daydream where spritzes and light fare provide a respite from the Texan heat.

By expanding Leigh’s beloved brand we also expanded her heartfelt gift to guests, who can now visit both of her lifelong Italian loves: home in the country and Saturday on the coast. 

Terrazza di Triozzi pairs perfectly with Via Triozzi, yet stands entirely on its own – a vibrant alfresco analogy to its rustic Tuscan roots.
